Vegetable Salad
Vegetable Salad -  Salads - Recipes Ref: 131
IslamiCity - Origin: Lebanon

Ingredients:

  • 1 Clove garlic
  • Salt to taste
  • 1/2 Small hot pepper, optional 
  • 1/4 cup Lemon juice
  • Few stems of fresh parsley and mint, coarsely chopped
  • 1 Small dry onion, finely chopped
  • 1 Small green pepper
  • 4 Leaves Romanian lettuce (other kind may be used)
  • 2 Green onions, coarsely chopped
  • 1 Medium cucumber
  • 1 Medium tomato
  • 1/4 cup Olive oil

Preparation:

Mash garlic, salt and hot pepper-­if used. Add lemon juice, mixing well. Cut all 
vegetables in chunks, add to garlic mixture. Add oil and toss thoroughly. 
Variation: Any combination of vegetables may be used, depending upon what is 
available.
